In July, we welcome a program that promotes a healthier community

The first month of Summer has greeted us with a sea of strawberries. Marketgoers have also enjoyed early-season vegetables, like cucumbers, lots of peas and beans, tomatoes and so much more! The market is in bloom, and besides fresh produce, you can find fresh milk and cheese straight from the lush green Oregon pastures, freshly baked rustic bread from Flour Market who joined us last month, lots of gluten- and allergy-friendly bakeries, refreshing beverages, exotic hummus – you name it! Everyone who visits our market will surely find something to their taste.

We also enjoy collaborating with local non-profits to spread the word about the good they are doing. In the month of July, we are welcoming All of Us Research Program that works toward creating a healthier community, Making Strides Against Breast Cancer, which is helping our community battle this devastating diagnosis, Moms Demand Action for Gun Sense in America, a non-profit who is thriving on making school environment for kids safer, and SMART Reading, a number of volunteers who dream of the future in which kids love to read and have access to the skill and resources. Master Gardeners OSU Extension Program is also with us weekly to answer any questions you may have about soil, plants, gardening, pest control, and more! Please take advantage of the presence of our community booths and see if you would like to join the action.

After a busy day of shopping, marketgoers can pick up delicious lunch like scrumptious tamales from Canby Asparagus, exotic Ethiopian dishes from Eleni’s Kitchen, fragrant barbeque from Smoking Rose, Korean comfort food from Rice Thief to name just a few. While they are taking their bite, they can relax and listen to live music delivered by the local bands. Our market thrives on making families come together in a safe and welcoming environment, and everyone is welcome every Saturday from 8:30 a.m. to 1:30 p.m.

 

Our Favorite Fava Bean Recipe

This month, we are featuring delicious and flavorful fava beans. Simple to make, this recipe makes an excellent lunch or a side dish for your summer grilling adventures.

Ingredients

  • 2 lbs fava beans with their pod
  • 3 tablespoon olive oil
  • 1 medium size onion, finely chopped
  • 2 cloves garlic, finely chopped
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • 1 cup water
  • ¼ cup fresh dill, chopped

Optional: 

  • Red pepper flakes
  • Fresh dill
  • Lemon

Instructions: 

  • Remove the fava beans from their pods.
  • Make a small slit on each bean.
  • Fill a saucepan with boiling water. Add in salt and stir.
  • Soak the beans in this hot salty water for about 10 minutes. Then peel their shells.
  • Heat olive oil in a pan and cook onions and garlic until translucent.
  • Add in shelled fava beans and cook for about 5 minutes.
  • Add in salt, sugar and water. Cook over medium-low heat until tender, for about 20 min.
  • Remove from the heat and let it cool a bit. Then add in chopped fresh dill and give it a good stir.
  • Serve with red pepper flakes, fresh dill and lemon slices.
